Another major example : the truffle from Burgundy, genuine black diamond of gastronomy with its unique flavour! The Borvo smoked salmon: an institution in Burgundy! Not forgetting parsleyed ham in aspic, small pickled dills, blackcurrant liqueur, the famous Burgundian Gougères, which delight everyone at aperitif time, ham chablisienne, poached eggs in red wine sauce, Beef Bourguignon… and our many local cheeses like Epoisses, Soumaintrain or fresh goat’s cheese.
