The appellation Crémant de Bourgogne brings together sparkling wines produced in the Bourgogne appellation area. This AOC, awarded in 1975, imposes strict production rules quite similar to those of Champagne: harvesting by hand, a minimum ageing period, etc. All Burgundy grape varieties can be used in Crémant de Bourgogne blends, even if the iconic Chardonnay and Pinot Noir are preferred. White and rosé Crémants de Bourgogne are produced in the Auxerrois region.
